Lemon Chicken Gnocchi!

Ingredients 

2 large chicken breast

1/2 teaspoon garlic powder

1 teaspoon lemon pepper seasoning

1 tablespoon olive oil

1 tablespoon butter

2 cloves garlic minced

1/2 cup chicken broth

1 tablespoon lemon juice

1 cup heavy/whipping cream

1 pound uncooked potato gnocchi

1/2 cup freshly grated parmesan cheese

2 cups (packed) fresh baby spinach

Salt & pepper to taste

Cut the chicken in half lengthwise to make 4 thinner cutlets.

Season with garlic powder and lemon pepper, adding salt if needed.

Heat oil and butter in a skillet over medium-high heat, then sear the chicken for 5-6 minutes per side until golden and cooked through.

Transfer chicken to a plate and reduce the heat to medium.

Add garlic to the skillet and cook for 30 seconds.

Stir in chicken broth and lemon juice, scraping up brown bits.

Add cream and gnocchi, stirring occasionally for 5-7 minutes until the sauce thickens.

Remove from heat, add parmesan and spinach, and mix until spinach wilts.

Return chicken to the skillet, spoon sauce over it, season, and serve immediately.
