Cream of Chicken & Rice Recipe ⬇️

Ingredients

• 3 chicken breasts (boneless, skinless)

• 6 cups chicken broth

• 1 can cream of chicken & herb soup

• 1 can cream of mushroom soup

• 2 cups yellow rice (uncooked)

• 4 celery stalks, diced

• 4 carrots, diced

• 1 yellow onion, diced

• 1 green bell pepper, diced

• 1–2 tbsp olive oil or butter

Seasonings (to taste):

• Adobo

• Onion powder

• Garlic powder

• Chicken bouillon

• Parsley

• Italian seasoning

• Creole seasoning

Instructions

1. Prep the chicken & veggies

• Dice the onion, celery, carrots, and green bell pepper.

• Season chicken breasts lightly with adobo, garlic powder, and onion powder.

2. Cook the chicken

• In a large pot or Dutch oven, heat olive oil or butter over medium heat.

• Add chicken breasts and sear on both sides until lightly golden (they don’t need to be fully cooked yet).

• Remove and set aside.

3. Sauté vegetables

• In the same pot, add the onion, celery, carrots, and bell pepper.

• Cook for 5–7 minutes until softened and fragrant.

4. Add broth & soups

• Pour in the chicken broth.

• Stir in the cream of chicken & herb soup and cream of mushroom soup until smooth.

5. Season the base

• Add chicken bouillon, parsley, Italian seasoning, a dash of Creole seasoning, garlic powder, and onion powder.

• Taste and adjust seasoning as needed.

6. Return chicken & cook rice

• Place chicken breasts back into the pot.

• Stir in the 2 cups of yellow rice.

• Bring to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes, until rice is tender and chicken is cooked through.

7. Shred chicken

• Remove chicken breasts, shred with two forks, and stir back into the pot.

8. Finish & serve

• Stir well so the shredded chicken, rice, and veggies are evenly combined.

• Sprinkle with extra parsley before serving.
