🥒✨Chicken and Chickpea Gyros✨🍋
PCOS friendly and Mediterranean diet friendly! For all my PCOS girlies out there! Currently I’m on the journey to taking control of my inflammation. I’ve started to follow the Mediterranean diet as I’ve read watch the amazing effects it can do for inflammation 🙌🏽 It’s been an amazing switch. This is such an easy quick lunch. It can also be motified for vegan/vegetarian babes 💖
I am also trying to align my chakras through healing foods 💖 hope this helps anyone on their journey 😘😘😘
ingredients needed:
• rotisserie chicken (cooked one from Kroger if you’re lazy like me 😛)
• english cucumbers
• red onion
• cherry tomatoes
• chickpeas
• ice berg lettuce
• feta cheese
• lemon
• extra virgin Greek olive oil
• Kalamata olives
• salt and pepper
Start by chopping up all your veggies. I like to start with the least messy. Portion sizes up to how much you are trying to prepare. I measure with my heart 😅 and made a big portion for a few people. Slice your cucumbers, cherry tomatoes red onion. I do a fine chop of the onion and cucumbers just because i love chopped salads - and it’s soothing to me to chop veggies 🥒🤣
Add them to a mixing bowl. Then you can chop up some iceberg. Also finely chopped. Add all ingredients to a large mixing bowl. Don’t forget the feta and olives. I measure this with love 😘 because i love the tang.
Next put your chickpeas in a separate bowl. I seasoned them with Trader Joe’s Chilli Lime seasoning, salt and pepper, and olive oil . If you have an airfryer you can preheat it to 400 degrees. I line it with foil and cook my chickpeas in there. I cook them for about 15 minutes or until crispy. Repeat the same steps in the oven if you don’t have a fryer - give or take 5 more minutes 🙌🏽
While the chickpeas are cookin, toast some pitas and essemble your salad. Mixing together all of your ingredients, add lemon. This could be to taste. I added the juice of one lemon, and about a tablespoon of oil. Measure with your heart - i like more citrus then olive oil and with good Greek oil you don’t need to overpower it. 🍋 add salt and pepper to taste! So delicious. A tangy quick Greek salad with chicken. And super cheap to make.
Take out you chickpeas and your pita and assemble the gyros 😍 i put down my salad chicken mixture and top with the crispy chickpeas! And side note this would be great with a tzatziki i just didn’t have time to make one 💜🥒
