These were so yum and easy to make! Organic, Mediterranean diet friendly and PCOS friendly. Recipe took me 15-20 minutes
Ingredients:
• Del Real Goods Carnitas - Costco
• Frozen Jasmine Rice - Trader Joe’s
• Roasted Tomatillo Salsa - Trader Joe’s
• Pico De Gallo Hot Salsa - Trader Joe’s
• Black Beans - Trader Joe’s
• Corn - Trader Joe’s
• Organic Chunky Homestyle Guacamole - Trader Joe’s
• Iceberg Lettuce - Trader Joe’s
• Cilantro - Trader Joe’s
• Serranos - Trader Joe’s
• Lime - Trader Joe’s
Super simple to assemble!
Carnitas cooked for about 5 - 6 minutes in the microwave or stove top and shred up nicely. There is no sugar and these are 200 calories for 3 oz.
jasmine rice can also be microwaved!!
Finely chop your cilantro, serranos if you’re spicy like me 😜, and your iceber lettuce. While the meat cooks open your corn can and black beans.
Take the meat out to cool. Heat the rice. When the rice is done - ad a sprinkle of salt and pepper to taste. The juice of half a lime, and the cilantro. BOOOM. Cheap chipotle cilantro lime rice hack ftw!!!
Next heat the beans if you are wanting them hot. You can even add cheese if you prefer.
Assemble your make shift chipotle bowl with your rice, meat, lettuce, corn, and beans. Next top with your salsas. Pico and green tomatillo. I love cooking these from scratch but this is half the effort and less mess!
Add a scoop of guacamole you didn’t have to pay 1.65 for 😝 so rewarding when it taste better than the real thing! And finish off with a little bit of serannos and cilantro! Serve bowl style or with some tortillas 😋
