I stumbled upon this gluten-free protein almond flour pancake mix recently, and it's been a total game-changer. My mornings are usually a rush, so finding something that's literally 'just add water' and delivers 11g protein per serving feels like a win. Plus, who doesn't love waffles? Making them is ridiculously simple. First things first, you'll need a waffle maker. Mine is a basic black and silver one, but honestly, any will do. I usually let it heat up while I'm mixing the batter. A little trick I learned is to lightly spray the waffle maker with cooking spray even if it says non-stick – it just helps ensure those perfect golden-brown results every time. For the batter, I just follow the package directions for waffles. It's usually a simple ratio of mix to water. I whisk it until it's just combined, trying not to overmix, which can make waffles tough. One time I added a splash of vanilla extract just for fun, and it was amazing! Pouring the batter into the hot waffle maker is the next step. If you have a Mickey Mouse-shaped waffle maker like mine, it makes breakfast even more fun! The kids (and let's be real, me too!) absolutely adore seeing those familiar ears pop out. I usually fill it just enough so it spreads to the edges without overflowing.
