1.Boil or bake sweet potatoes until fork tender. Let cool and remove skin. Blend or food process potatoes until they are mashed and smooth.
2.In a mixing bowl mix mashed sweet potatoes, sugar, brown sugar , cinnamon, nutmeg, vanilla bean paste, vanilla extract , evaporated milk, eggs and salt.
3.While mixing pie filling, bake pie crust in the oven on 350 for 12-15 minutes, remove from oven.
4.Pour sweet potato filling into pie crust , move to the oven and bake on 350 for 50 minutes.
5.Let cool at room temp for 3-4 hours. Refrigerate overnight for best results.
