Pie
* 1 store-bought pie crust
* 2 medium sweet potatoes
* 1 stick unsalted butter
* 1/2 cup brown sugar
* 1/4 cup granulated sugar
* 2 eggs
* 1/2 cup evaporated milk
* 1 tsp vanilla extract
* 1 tsp cinnamon
* 1/4 tsp nutmeg
* 1/4 tsp ginger
* 1/2 tsp salt
Praline Topping
* 1 can evaporated milk (12 oz)
* 1 1/2 cups granulated sugar
* 1/2 stick butter
* 1 tbsp dulce de leche
* 2 tbsp pure vanilla extract
* 1 cup chopped pecans
Instructions
1. Roast the Sweet Potatoes
Bake sweet potatoes at 400°F for 45–50 minutes until fork tender. Cool, peel, and mash until smooth.
2. Brown the Butter
In a saucepan over medium heat, melt the butter until golden brown with toasted bits at the bottom and a nutty aroma. Remove from heat and cool slightly.
3. Make the Pie Filling
In a large bowl combine:
* mashed sweet potatoes
* browned butter
* brown sugar
* granulated sugar
* eggs
* evaporated milk
* vanilla
* cinnamon
* nutmeg
* ginger
* salt
Mix until smooth and creamy.
4. Bake the Pie
Pour filling into the pie crust.
Bake at 350°F for 50–60 minutes or until the center is mostly set with a slight jiggle.
Let cool completely.
5. Make the Praline Topping
In a saucepan over medium heat combine:
* evaporated milk
* sugar
* butter
* dulce de leche
Bring to a gentle boil while stirring frequently.
Cook about 10–15 minutes until slightly thickened and caramel-colored.
Remove from heat and stir in:
* vanilla extract
* chopped pecans
Let cool slightly so it thickens a bit more.
6. Finish the Pie
Pour the praline topping over the cooled sweet potato pie.
