HOMEMADE GROUND BEEF TACO BOWL
This recipe of perfect for two or for one with left overs. If you need to serve 3-4 I suggest doubling the recipe! I use microwave rice because it’s just for me and I don’t have as much left over!
Ingredients:
🥩1/2 lb ground beef (ground turkey or ground chicken work too!)
🍚1 pkg microwaveable Spanish rice (I love A Dozen Cousin brand)
🧅 1/4 yellow onion
Seasonings:
🧂 1 tsp salt
🧂 1 tsp pepper
🧂 1/2 tbsp cumin
🧂1/2 tbsp chili powder
🧂1 tsp paprika
*optional* 🧂1 tsp cayenne pepper
Toppings:
🌶️ Jalapeño Salsa or your fav salsa
🧀 Queso Fresco
🌽 Tortilla Chips
*optional 🫘 black beans or whole beans
Directions:
1. In a medium pot cook ground beef w/ yellow onion until it is browned and the onion is soft (if you use a leaner ground beef make sure to cook it at a lower temp so it doesn’t dry out) (if you use a higher fat ground beef towards the end turn up the heat to cook some of the grease out)
2. Once the meat is cooked then add the seasonings and simmer on low for 3-5 mins
3. Heat the rice (and beans if you choose)
4. Plate & enjoy! (I typically put the rice at the bottom, meat on top, then add the toppings and stick a couple chips on top)
