"Boiled chestnuts with astringent skin"

3 teaspoons baking soda
500g sugar (leave 1 tablespoon for last)
How to make
① Wash the chestnuts with water and boil them in a pot with enough water to cover the chestnuts. Blanch for 5 minutes. After draining the water and cooling, it will be easier to peel the demon skin, so use a kitchen knife to peel the astringent skin. There is a thick line, but you can leave it without taking it.
② Put enough water to cover the chestnuts and 1 small baking soda in a pot, and when it boils, adjust the heat so that the chestnuts do not dance and boil for 10 minutes while taking the lye.
③ Discard the dark broth while running water, wash away the astringent skin fiber of the chestnut (gently so as not to tear the astringent skin) and gently remove a thick line with a finger and a toothpick.
④ Put 1 small amount of baking soda in enough water to cover the chestnuts in a pot and repeat the ③ step 2 more times.
⑤ Discard the dark broth and boil twice in hot water for 5 minutes to remove the baking soda.
⑥ Drain the hot water, add the chestnuts, water and sugar about half the weight of the chestnuts in a pot two or three times, and when it boils, simmer over medium to low heat for 20 minutes.
⑦ Cool ⑥ in the pot, remove only the chestnuts, heat the syrup again, add sugar tablespoon 1 and boil down a little. When the shine comes out, put the chestnuts back in the syrup and it's done ✨
