Cilantro Lime Chicken Fajita Bowls

These Cilantro Lime Chicken Fajita Bowls are so easy and delicious. They require no chopping and are ready in minutes. The creamy cilantro lime sauce is the perfect topping to this bowl- refreshing and perfect for hot summer evenings. ☀️

Easy Cilantro Lime Chicken Fajita Bowl

Fajita Chicken:

1-1.5 oz fajita seasoning packet

1–2 tablespoons lime juice

3–4 tablespoons extra virgin olive oil

1-2 tablespoons fresh cilantro, chopped (optional)

4 boneless skinless chicken breasts, cut into strips

Salt and pepper, to taste

Fajita Veggies:

20 oz frozen peppers and onions

additional salt and pepper, to taste

Chicken Fajita Bowl:

cilantro lime rice (homemade or store-bought)

tortillas of your choice, warmed

cilantro lime sauce

guacamole or avocado chunks

corn salsa

lime wedges

fresh cilantro

Directions:

1. Cook Chicken: Bring a large skillet to medium-high heat. Add some oil, swirl to coat the pan. Add chicken strips to pan. Top with half of the fajita seasoning and stir to combine. Sear 8-10 minutes or until the internal temperature of the thickest part of the chicken reaches 160 degrees F.

2. Cook Veggies: Keeping pan at a medium-high heat, add garlic and stir until it becomes fragrant, approx. 1 minute. Add frozen onions and peppers and the remaining fajita seasoning. Stir to combine.

3. Finish Veggies: Sauté for approx. 10 minutes. Drain excess liquid. Sauté until remaining liquid thickens into a sauce. Taste and salt and pepper, to taste. Add fresh cilantro and lime juice.

4. Serve: In each bowl, add cilantro lime rice, chicken, fajita veggies, corn salsa, guacamole, cilantro lime sauce, fresh cilantro, and fresh lime wedges. Enjoy!
