Chicken Enchiladas Easy
These are so easy and one of my husband's favorites. He loves enchiladas. They are typically his go-to food when we eat at a Mexican restaurant, so I thought I'd try making them for him at home.
You'll need:
• Tortillas
• Rotisserie chicken
• Beans of your choice, we used black beans
• Can of Rotel or diced tomatoes
• Enchilada sauce of your choice, we used red
• Cheese of your choice, we used Mexican shredded blend
1.) Preheat your oven to 350°.
2.) Grease your pan to bake, I used Pam Olive Oil spray.
3.) Cut up and shred your rotisserie chicken. About 1 1/2 cups worth.
4.) Warm your tortillas over a frying pan or microwave about 30 seconds each to make them pliable.
5.) Place chicken, Rotel, and beans on tortillas. Roll into an enchilada shape.
6.) Pour a layer of enchilada sauce over the top.
7.) Top with shredded cheese to your desire. I used about 1 1/2 cups.
8.) Bake for 20 minutes. Until cheese it melted and bubbly.
9.) Serve immediately with desired toppings and enjoy!
