one pot creamy lemon chicken orzo

This lemon chicken orzo pasta is perfect for weeknights since it's all made in one pot. It's packed with flavor and save time with clean up! With It's bright flavors, it's the perfect spring dish!

Ingredients

For the Chicken Marinade

410 g of chicken fillets

½ cup Greek yogurt

3 tbsp olive oil

Zest and juice of 1 lemon

2 garlic cloves, minced

½ tsp dried oregano

½ tsp dried basil

¼ tsp black pepper

For the Orzo

1 cup uncooked orzo

1 tbsp olive oil

2 garlic cloves, minced

Juice of 1 lemon

¼ tsp oregano

¼ tsp basil

½ tsp salt

2 ¼ cups chicken broth

Instructions

1. In a large bowl, whisk together Greek yogurt, olive oil, lemon zest, lemon juice, garlic, oregano, basil, and black pepper.

2. Add the chicken fillets, coat well, and let marinate for at least 30 minutes (or overnight for best flavor).

3. Heat a large pot or deep skillet over medium heat. Cook the marinated chicken fillets for 2 minutes per side until golden brown. Remove from the pan and set aside.

4. In the same pot, add 1 tbsp olive oil and minced garlic. Sauté for 2 minutes until fragrant. Stir in dry orzo, cooking for 1 minute to lightly toast it.

5. Add lemon juice, dried oregano, basil, salt, and chicken broth. Bring to a gentle simmer and cook for 3-5 minutes, stirring occasionally.

6. Return the cooked chicken fillets to the pot, nestling them into the orzo. Cover and cook for 15-20 minutes unil the chicken is cooked through and the orzo is tender.

7. Fluff the orzo with a fork and garnish with fresh Parmesan and herbs if desired.

8. Serve warm and enjoy!
