🍋Tuscan Chicken

This was sooo good. The whole family thought it was a slam dunk. Even the baby loves it. All the flavor none of the guilt. And it was so fast and easy to make.

Serves 6

Approximately 688 Calories for the whole meal

Ingredients:

2¼ lb boneless, skinless chicken breasts

2 Tbsp olive oil

2 (14.5-oz) cans diced tomatoes with Italian seasoning

½ cup white wine

1 (10-oz) pkg spinach

1 (8-oz) pkg shredded mozzarella cheese

Instructions:

Pound chicken to an even thickness between plastic wrap using a meat mallet. Season chicken with salt and pepper, if desired.

Cook chicken in hot oil in a large skillet over medium-high heat 3 minutes per side or until browned.

Add tomatoes and wine. Cover, and cook 5 minutes or until chicken is done. Gradually stir in spinach until wilted.

Sprinkle chicken with cheese; cover and let stand 1 minute.

Side Dish Ingredients:

2 (9-oz) pkg refrigerated fettuccine

2 (8-oz) pkg thin green beans

Side Dish Instructions

Cook pasta according to package directions.

Steam green beans according to package directions; season with salt and pepper, if desired.
