Ingredients:

1 cup cottage cheese

2 large eggs

½ cup oat flour (or almond flour for low-carb)

1–2 tbsp honey or maple syrup (optional)

1 tsp vanilla extract

½ tsp baking powder

Pinch of salt

½ cup fresh or frozen blueberries

2 tbsp chopped almonds

Directions:

Step 1: Preheat & Prep

Oven: Preheat to 350°F (175°C) and grease or line a mini muffin tin.

Air fryer: Preheat to 320°F (160°C).

Step 2: Mix the Batter

In a bowl or blender, combine cottage cheese, eggs, honey, and vanilla until smooth. Add oat or almond flour, baking powder, and salt. Stir until well combined.

Step 3: Add Blueberries & Almonds

Gently fold in blueberries and chopped almonds.

Step 4: Bake or Air Fry

Oven: Spoon batter into muffin cups and bake 18–22 minutes until golden and set.

Air Fryer: Fill silicone molds and cook 10–12 minutes until fluffy.

Step 5: Cool & Serve

Let cool slightly before serving. Perfect warm or chilled — soft, naturally sweet, and protein-packed!

Frozen blueberries can be added directly without thawing.
