WIP: curing for salted egg yolks These homemade salted yolks will be going into zongzi / joong (Chinese sticky rice dumplings) ^_^ It usually takes 40 days to cure in a salt/water brine. 100g salt for every 100 L of water. Over curing will make the yolk mushy so I like to check on it through
