🍤 Shrimp Enchiladas with Cheese Sauce 🌮

Ingredients:

For the Shrimp:

1 lb shrimp, peeled and deveined

1 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

1 tsp ground cumin

Salt and pepper to taste

Fresh cilantro for garnish

For the Enchiladas:

8 small flour tortillas

1 cup shredded cheese (cheddar or Monterey Jack works well)

For the Cheese Sauce:

1 tbsp butter

1 tbsp flour

1 cup heavy cream

1/2 cup shredded cheddar cheese

Salt and pepper to taste

Instructions:

Prepare the Shrimp:

In a large pan, heat the olive oil over medium heat. Add the shrimp, garlic powder, paprika, cumin, salt, and pepper. Cook the shrimp for 2-3 minutes on each side, or until fully cooked and pink. Set the shrimp aside.

Make the Cheese Sauce:

In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux.

Slowly whisk in the heavy cream, and cook for another 3-4 minutes until the sauce begins to thicken.

Stir in the shredded cheddar cheese and continue to cook until the cheese has melted and the sauce is smooth. Season with salt and pepper.

Assemble the Enchiladas:

Preheat your oven to 375°F (190°C).

Lay the tortillas flat and place a few shrimp in the center of each. Roll them up tightly and place them in a baking dish.

Pour the cheese sauce over the top of the enchiladas, making sure they are well covered.

Sprinkle the shredded cheese on top.

Bake:

Place the baking dish in the oven and bake for 20-25 minutes, or until the cheese is bubbly and golden.

Serve:
