Valentine’s Cream Cheese Butter Mints

Ingredients:

4 oz cream cheese, softened

4 cups powdered sugar, sifted

2 tbsp unsalted butter, softened

1/4 tsp peppermint extract

Gel food coloring (red and pink)

Granulated sugar (for coating)

Directions:

In a mixing bowl, beat the softened cream cheese and butter together until creamy and smooth.

Add peppermint extract and mix well. Gradually add powdered sugar, 1 cup at a time, mixing until the dough is smooth and not sticky.

Divide the dough into three portions. Leave one plain, color one with red food coloring, and the other with pink food coloring. Knead the colors in evenly.

Roll each portion into a flat sheet and cut out heart shapes using a small heart-shaped cutter.

Roll each heart in granulated sugar to coat.

Place the hearts on a parchment-lined tray and refrigerate for 1-2 hours to set. Serve chilled or at room temperature.
