best shepherds pie (easy fall recipe) 🥧🍂🍁
The perfect, cozy fall meal. A delicious meaty filling layered with creamy garlicky potatoes. Shepherds Pie is traditionally made with lamb hence “Shepherd”, however beef is also commonly used, which the changes the name to “Cottage Pie”. Either way, they are both delicious. Make sure to give this one a try!
Servings: 6
- Olive oil
- 1 pound ground beef or lamb
- 1/2 large onion, chopped
- 1 teaspoon fresh thyme
- 1/2 teaspoon fresh oregano
- 1 teaspoon fresh rosemary
- 1 teaspoon fresh or dried parsley
- 1 tablespoon low sodium soy sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon chili flakes
- 4 garlic cloves, minced
- 2 tablespoons all purpose flour
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 cup frozen peas and carrots
- Sprinkle of sugar
- Fresh parsley or scallions, finely chopped
Mash Potato Topping:
- 2 pounds russet potatoes, peeled and cubed
- 1 stick unsalted butter, melted
- 1/3 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon fresh rosemary
- 1/4 cup Asiago or Parmesan cheese
- Fresh parsley or scallions, chopped
Directions:
1. Start by boiling the potatoes in salted water. In a cast iron skillet, add olive oil and beef. If you’re using 80/20 or 85/15, cook it out first, remove the fat, and proceed with the olive oil after.
2. Add onions, cook until caramelized. Then the herbs, cook until fragrant.
3. Add soy sauce and spices, cook for 1 minute.
4. Continue with garlic, flour, and tomato paste. Mix well and cook for another 3 to 5 minutes.
5. Deglaze with beef broth. Scrape up all the tasty flavor bits. Finish with frozen peas, carrots, and sugar. Taste for any additional seasoning.
6. The potatoes should be done at this point. Drain and let them dry for a few minutes. Mash them using a masher or potato ricer.
7. Heat up butter, heavy cream, salt, pepper, garlic powder, and fresh herbs. Mix well and add to the mash potato along with cheese. Combine until smooth.
8. Layer the mash potato on top of the meat mixture. Smooth it well and use a fork to create a design (optional).
9. Bake in a preheated 400°F oven for 25 to 30 minutes, broil at high during the last 5 minutes.
10. Let it rest for 10 minutes! Serve with more fresh scallions, enjoy!
