Ingredients
• 1 pound beef tips (thawed)
• 1 cup white rice
• 1 bag broccoli and cauliflower florets (about 2 cups or more)
• 1 packet brown gravy mix (to make 1 cup of gravy)
• 1 can cream of mushroom soup (10.5 oz)
• 1/4 small onion, diced
• 1/4 small onion, julienned
• 1 clove minced garlic (or to taste)
• 2 tbsp olive oil
• 1/2 tbsp Worcestershire sauce
• Seasonings: to taste
Instructions
1. Prep Ingredients (Start at 5:00 PM)
• Dice 1/4 of the onion and mince garlic.
• Julienne 1/4 of the onion for roasting with vegetables.
• Preheat oven to 400°F for roasting vegetables.
2. Cook the Beef Tips (Start at 5:15 PM)
• Heat 1 tbsp olive oil in a sauté pan over medium-high heat.
• Add beef tips and sear for 2-3 minutes per side until browned.
• Remove the beef from the pan and set aside.
3. Prepare the Brown Gravy (Start at 5:20 PM)
• In a small pan, bring 1 cup of water to a boil.
• Gradually whisk in the brown gravy mix, stirring continuously to prevent lumps.
• Lower the heat to medium and continue stirring for 1 minute, or until the gravy thickens and is smooth. Remove from heat.
4. Combine Gravy with Cream of Mushroom and Beef (Start at 5:25 PM)
• In the sauté pan used for the beef, add the diced onion and minced garlic. Sauté for 2-3 minutes until softened.
• Add the prepared brown gravy and the can of cream of mushroom soup to the pan, stirring until combined.
• Add Worcestershire sauce and season with salt, pepper, and paprika to taste.
• Return the seared beef tips to the pan.
• Cover and simmer on low heat for 30 minutes, stirring occasionally.
5. Roast Broccoli and Cauliflower (Start at 5:35 PM)
• Spread the entire bag of broccoli and cauliflower florets on a roasting pan.
• Add the julienned onions.
• Drizzle with olive oil and season with garlic powder, onion powder, salt, pepper, and paprika. Toss to coat evenly.
• Roast for 20-25 minutes, tossing halfway through, until tender and lightly browned.
6. Cook the Rice (Start at 5:40 PM)
• In a medium pot, bring 1 1/2 cups of water to a boil. Add a pinch of salt.
• Stir in 1 cup of rice, reduce the heat to the lowest setting, and cover the pot.
• Let the rice cook undisturbed for 20 minutes.
• After 20 minutes, remove the pot from heat and let it sit, covered, for 5 minutes.
• Stir in 1 tbsp of butter and season to taste before serving.
7. Assemble and Serve (Start at 6:00 PM)
• Plate the rice as a base.
• Top with beef tips and creamy gravy.
• Serve roasted broccoli, cauliflower, and onions on the side.
