Seriously, if you're looking for a satisfying meal that packs a punch with around 47g of protein (as measured in my version!), this is it. My secret is using cauliflower rice mixed with a little regular brown rice to cut down on carbs while boosting veggies, and loading it with lean chicken breast, eggs, and plenty of mixed vegetables like peas, carrots, and bell peppers. A low-sodium soy sauce or tamari, a dash of sesame oil, and ginger really bring out the flavors. It’s a brilliant way to use up leftover chicken and veggies, making meal prep a breeze.
For mornings, nothing beats the convenience and protein power of overnight oats, especially when paired with collagen coffee, hitting around 50g of protein. I prepare my oats the night before with rolled oats, chia seeds, protein powder (vanilla or chocolate), and unsweetened almond milk. Sometimes I'll add berries or a few nuts in the morning. And my coffee? A scoop of unflavored collagen peptides stirred into my morning brew. It's an easy way to boost protein without even thinking about it, and it really aids in satiety until lunch.
Lastly, for a quick and simple meal, an omelette with chicken sausage and apple provides a solid 38g of protein. I whisk a few eggs with a splash of milk, load it with spinach, mushrooms, and diced lean chicken sausage, then fold it over. A crisp apple on the side adds natural sweetness and fiber. It's a quick, delicious, and nutrient-dense meal perfect for any time of day when you need something fast and satisfying.
Incorporating these kinds of meals into my routine has made a huge difference in staying on track with my mini-cut goals. They prove that healthy eating doesn't have to be boring or restrictive. It's all about strategic choices and enjoying what you eat!
