... Read moreHey everyone! 👋 You know how much I love a good fruit prep session, especially when it turns out looking like a rainbow! It’s not just about the aesthetics, though. I’ve been getting a lot of questions lately about how to get more Vitamin D, and while fruits aren't typically a primary source, there are definitely ways to make your fruit bowl work harder for your health, and a few things we can include to boost that sunshine vitamin! First off, let’s clear the air: very few fruits naturally contain significant amounts of Vitamin D. Think of Vitamin D as the sunshine vitamin – our bodies produce it when exposed to sunlight, and it's also found in fatty fish, egg yolks, and fortified foods. However, that doesn't mean your colorful fruit prep can't play a role in a Vitamin D-rich diet or support overall bone health. I always look for fortified orange juice or plant-based milks that have added Vitamin D, which can be a delicious base for smoothies with your fresh fruit. And don't forget about UV-light exposed mushrooms! While not a fruit, they are a fantastic plant-based source of Vitamin D and can be a great addition to savory dishes alongside a fruit snack. So, even if fruits aren't packed with Vitamin D themselves, they're loaded with other essential nutrients that work synergistically with Vitamin D to keep you healthy. For instance, many fruits are rich in Vitamin C, which is crucial for overall immune health, and antioxidants that protect your cells. Berries like blueberries, raspberries, and strawberries are antioxidant powerhouses, while citrus fruits such as oranges and grapefruits are bursting with Vitamin C. These all contribute to a healthy body, which can better utilize the Vitamin D you do get. Now, for those 'RAINBOW Fruit Prep safe' tips that make my fruit bowls so appealing (and help prevent waste!). I absolutely love creating a visual feast because let’s be honest, we eat with our eyes first! My top tip for making your fruit look like 'rainbowfuelx' is to choose a variety of colors: red strawberries or watermelon, orange mandarins or cantaloupe, yellow pineapple or mango, green kiwi or grapes, blue blueberries, and purple grapes or plums. Cut them into different shapes for added interest – cubes, slices, or even using a melon baller for perfect spheres. Layering them in clear containers not only makes them look beautiful but also encourages me to grab a healthy snack whenever hunger strikes. And for keeping everything fresh and safe? Washing your fruits thoroughly under running water is a must, even if you plan to peel them. For berries, I sometimes give them a quick vinegar bath (1 part vinegar to 3 parts water) followed by a rinse to extend their shelf life. Make sure all your cutting boards and utensils are clean to prevent any cross-contamination. For fruits like apples and pears that brown quickly, a quick dip in lemon water can help maintain their fresh look. Store different fruits separately if they have varying ripening rates; for example, keep bananas away from other fruits to prevent them from ripening too fast. Airtight containers are your best friend for keeping everything crisp and delicious all week long. Happy prepping!
