Fried Eggplant Sandwich 🍆😊

Going to start posting more meatless meals because I don’t eat meat 🌱

If you’re interested in trying this delicious meal/snack ⬇️

Things to buy :

*very much optional condiment items*

•Eggplant

•Cooking oil

•Lettuce

•Tomato

•Onion

•Mayo

•Mustard

•Banana peppers

•Pickles

•Provolone cheese

•Flour

•Bread Crumbs

•Sub bread/Hoagie Bread

Frying Eggplant:

Slice semi thick pieces

Whip Up 2/3 Eggs (enough for a whole eggplant)

Add flour to a dish and SEASON WELL

Add Bread crumbs to dish and SEASON WELL

Season the whipped eggs as well

Dip in flour first

Egg fully

Bread crumbs

(You can also dip back in flour and egg twice for more crispiness, once worked perfect for me)

Into HOT grease until crispy (to your liking)

I also added wedge potatoes for a side topped with old bay and garlic Parmesan seasoning ❤️
