Ingredients

- 1.5lb 80/20% ground beef

- 1/2 yellow onion, diced

- 2 tbsp tomato paste

- 1/3 cup water

- 2 tsp garlic powder

- 2 tsp onion powder 2 tsp chili powder (adjust to taste)

- 2 tsp cumin

- 1 tsp chipotle powder

- 1 tsp oregano

- 1 tsp smoked paprika

- 1 tsp salt

- Cilantro for garnish

- 8oz mozzarella cheese, shredded

- Flour tortillas

Sauce

- 1 bunch cilantro

- 2 jalapeños

- 5 garlic cloves

- 1/3 cup mayonnaise

- 1/3 cup sour cream

- 2 limes, freshly squeezed

- 3 tosp olive oil

- 1/2 tosp garlic powder

- 1/2 tosp oregano

- 1 tsp chicken bouillon

- Salt and pepper to taste

Instructions

- Add cilantro, jalapeños, garlic, mayonnaise, sour cream, lime juice, olive oil, garlic powder, oregano, chicken bouillon, salt, and pepper to a blender or large bowl.

- Blend until smooth and creamy.

- Taste and adjust seasoning. Refrigerate until ready to use.

- In a large pan over medium-high heat, add olive oil, diced onions, and cook until softened about 3-4 minutes. In the same pan add ground beef and cook the ground beef until mostly browned. Add spices, mix until evenly coated.

- Stir in tomato paste and cook for 1 minute to caramelize it.

- Add water mix well, add lid, and let it simmer until thick and tlavortul.

- In a large pan on medium high heat add neutral high heat oil

- Add a spoonful of beef to one half of each tortilla.

- Top with a generous amount of shredded mozzarella. Fold the tortilla over and press gently to seal.
