This week's prep, inspired by classic whole food salad bars, showcases how simple ingredients can come together to create vibrant and satisfying meals for one. I love incorporating a variety of salads—such as carrot, cabbage, and cilantro combinations—paired with steamed vegetables like broccoli and carrot middles, which keep well throughout the week. The addition of a miso butter rice is a delightful twist; mixing a scoop of miso and butter into freshly cooked rice adds both umami depth and creamy texture, elevating the dish beyond plain rice. For breakfast, mango lassi overnight oats have become a favorite. By blending frozen mango into the oats, I create a creamy, pudding-like texture that doubles as a refreshing dessert or a nourishing start to the day. Adding herbal infusions, like lavender or hibiscus tea, to my daily routine also enhances self-care moments, bringing calm and a subtle flavor to my iced coffees. Making your own coffee creamers is another personal favorite. Combining ingredients like macadamia, coconut, black sesame, and pumpkin seeds, along with a touch of melted dark chocolate, tahini, and agave, lets me control flavors and avoid processed additives. Meal prepping doesn’t have to be complicated or time-consuming. By focusing on versatile, nutrient-rich ingredients and preparing them mindfully, each meal feels intentional and supportive of both physical health and mental well-being.
