There’s always a secret ingredient
Classic New York Cheesecake
Rich, creamy, and perfectly smooth, this Classic New York Cheesecake has a luscious texture with a hint of lemon and a secret ingredient—sour cream—for extra richness. Topped with a sweet-tart raspberry compote, this cheesecake is the perfect indulgence.
Ingredients
(Makes one 9-inch cheesecake)
For the Crust:
• 1 ½ cups (180g) graham cracker crumbs
• ¼ cup (50g) granulated sugar
• 6 tbsp (85g) unsalted butter, melted
For the Cheesecake Filling:
• 24 oz (680g) cream cheese, softened
• 1 cup (200g) granulated sugar
• 1 tbsp cornstarch
• 3 large eggs
• ¾ cup (180g) sour cream (secret ingredient!)
• 2 tsp vanilla extract
• 1 tsp lemon zest
• 2 tbsp fresh lemon juice
For Topping:
• Raspberry compote (check out my other post for the full fruit compote recipe!)
Instructions
1. Prepare the Crust:
1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
3. Press the mixture firmly into the bottom of the pan.
4. Bake for 10 minutes, then set aside to cool.
2. Make the Cheesecake Batter:
1. In a large bowl, beat cream cheese, sugar, and cornstarch until smooth.
2. Add eggs one at a time, mixing just until combined.
3. Stir in sour cream, vanilla, lemon zest, and lemon juice, mixing until silky.
3. Bake the Cheesecake:
1. Wrap the outside of the springform pan in foil to prevent leaks.
2. Pour the batter over the crust and smooth the top.
3. Place the pan into a larger roasting pan and pour hot water around it (water bath for even baking).
4. Bake for 55–65 minutes, or until the edges are set but the center has a slight jiggle.
5. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
4. Chill & Serve:
1. Refrigerate for at least 6 hours or overnight for the best texture.
2. Before serving, top with raspberry compote for a fruity, tart contrast.
