I used to think cabbage was just for coleslaw, but frying it up with some smoky chipotle heat completely transforms it. If you're looking for a meal that's both comforting and packed with flavor, you absolutely have to give this a try. What I love most about this chipotle cabbage dish is how customizable it is. The base is just fried cabbage and fluffy rice, but that chipotle drizzle? That's where the real party starts. I usually make my own by blending chipotle peppers in adobo sauce with a little lime juice, a touch of honey or maple syrup for balance, and a splash of water or even a bit of Greek yogurt for creaminess. It adds such an incredible smoky, spicy kick that ties everything together in the bowl. When I'm making my fried cabbage, I always make sure to get a nice char on it without letting it get too soft. I chop the cabbage into bite-sized pieces, then sauté it in a hot pan with a little oil until it's tender-crisp and has those lovely browned edges. Sometimes I'll add a minced garlic clove or a slice of onion in there for extra aromatics.
