Southern Breakfast for Mom
Made a Southern-style breakfast with creamy grits, crispy fried catfish fillets, and soft scrambled eggs.
This is the kind of meal that feels like home. Warm, filling, and made with intention. I’m making something that’s going to sit right and actually be enjoyed. Simple ingredients, but done right… that’s what makes it special.
🍽️ Ingredients
Catfish Fillets:
* Catfish fillets
* 1 egg
* Yellow mustard
* Garlic powder
* Creole seasoning
* Fish fry (I used Louisiana-style)
Grits:
* Quick or stone-ground grits
* Water or milk
* Butter
* Salt
Scrambled Eggs:
* Eggs
* Butter
* Salt (keep it simple)
👩🏽🍳 Instructions
Catfish:
1. Season fillets with egg, mustard, garlic powder, and Creole seasoning.
2. Let sit (or marinate briefly if you have time).
3. Coat in fish fry and deep fry until golden and crispy.
Grits:
1. Bring water (or milk) to a boil.
2. Whisk in grits, reduce heat, and cook until smooth.
3. Add butter and salt & pepper to taste.
Eggs:
1. Cook low and slow in butter.
2. Lightly season with salt and black pepper “keep them soft and fluffy”.
💐 Why It’s Meaningful
Not everything has to be fancy to be thoughtful. Sometimes it’s a plate like this; hot, fresh, and made with care.
The kind of breakfast that says “you don’t have to do anything today… I got you.”
