Pour the caramel into a buttered nonstick pan and place the pineapple slices on top. Set aside to cool.
In a bowl, whisk the sugar, vanilla, and eggs until creamy and pale.
Add the remaining ingredients and mix quickly.
Pour over the caramel and pineapple and bake in a preheated oven at 180°C until golden brown (approximately 45 minutes).
Pour over the pineapple juice or canned juice, wait 5 minutes, then turn the cake out onto a plate and let it cool.
