Grilled Chimichurri Chicken🐔

4 skinless, boneless chicken breasts
½ cup fresh parsley, finely chopped
½ cup fresh cilantro, finely chopped
2 green onions (green parts only), finely chopped
2–3 garlic cloves, finely chopped
1 red chili, deseeded and finely chopped
½ tsp dried oregano
½ tsp dried basil
⅓ cup olive oil
1 tbsp red or white wine vinegar
Kosher salt and ground black pepper, to taste
Instructions📍
Make the Chimichurri: In a bowl, combine parsley, cilantro, green onions, garlic, and red chili. Stir in oregano, basil, olive oil, vinegar, salt, and pepper. Let rest for 10 minutes.
Marinate the Chicken: Pour ⅓ of the chimichurri over the chicken and marinate for 15–20 minutes (or longer for deeper flavor).
Grill: Preheat grill to medium-high. Cook chicken for 6–8 minutes per side, or until internal temperature reaches 165°F (74°C).
Serve: Let chicken rest for a few minutes, then serve with the reserved chimichurri sauce on top or on the side.
Notes:
Longer marination enhances flavor.
Preheating the grill prevents sticking.
