🧾 INGREDIENTS
🍫 Dark Chocolate Cookie Base
・3 large egg whites, room temperature
・300g (2½ cups) powdered sugar
・80g (¾ cup) unsweetened cocoa powder
・1 tbsp cornstarch
・¼ tsp fine sea salt
・1 tsp vanilla extract
・2 tbsp fresh orange zest
・3 tbsp fresh orange juice
🍊 Citrus Flavor Boost
・2 tbsp fresh orange zest (extra for dough)
・1 tsp orange extract
・1 tbsp Grand Marnier or orange liqueur (optional)
🍫 Chocolate Mix-Ins
・200g (7oz) good quality dark chocolate (70%), roughly chopped
・100g (3.5oz) dark chocolate chips
🌟 Topping
・2 tbsp coarse sea salt flakes
・2 tbsp fresh orange zest curls
・50g (2oz) dark chocolate, melted for drizzling
・Cocoa powder for dusting
🔢 INSTRUCTIONS
🔥 Preheat oven to 175°C (350°F) and line two baking trays with parchment paper.
🥣 Sift powdered sugar, cocoa powder, cornstarch, and salt into a large bowl.
🍊 Add orange zest, orange juice, vanilla, and orange extract to the dry mixture.
🥚 Whisk egg whites separately just until frothy, then fold into the cocoa mixture until shiny and thick.
🌬️ Stir in chopped dark chocolate and chocolate chips until evenly distributed.
⏰ Let the batter rest for 5 minutes — it should be thick like brownie batter.
🥄 Scoop tablespoon portions onto the parchment, leaving 5cm (2 inches) between each.
🌡️ Bake for 12-14 minutes until tops are crackly and shiny, centers still slightly soft.
❄️ Cool on the trays for 10 minutes — they firm up as they cool but stay fudgy inside.
✨ Drizzle with melted chocolate, scatter orange zest curls, sprinkle sea salt and dust with cocoa powder.
