The BEST Irish Soda Bread ☘️

-2 Cups Flour

-5 Tablespoons sugar (divided)

-1 1/2 tsp Baking Powder

-1 tsp Salt

-3/4 tsp Baking Soda

-3 Tbsp unsalted butter (chilled)

-1 cup buttermilk

-1/2 cup raisins

Preheat oven to 375F. Whisk flour, 4 tbsp sugar, baking powder, baking soda and salt to blend. Add butter and kneed with fingertips until course meal forms. Add buttermilk to the center. Mix until blended. Stir in Raisins.

Place in pan and flatten slightly. It should not touch the sides on the pan. Sprinkle with remaining 1tbsp of sugar. Bake 35-40 min

*I use 9” aluminum tins for these as I make a lot at one time.
