Creamy Italian sausage and potato soup
Ingredients:
1 pound Italian sausage
1 yellow onion (chopped)
Spinach
4-5 Yukon gold potatoes (diced)
1 cup Heavy whipping cream
4 cups chicken broth
28 oz diced tomatoes (drained)
1 cup Parmesan cheese (shredded)
Mushrooms (optional)
Olive oil
Italian seasoning
Minced garlic
Salt
Pepper
Let me start by saying I brown my meat in the same pot the soup will end up in!
Directions:
1. Brown Italian sausage and drain.
2. In a separate pan, start cooking down the onion and mushrooms together in olive oil, add salt, pepper, garlic to taste.
3. Once those are done, add them to the Italian sausage and stir.
4. Add diced tomatoes and season with Italian seasoning, salt and pepper to taste.
5. Add chicken broth and bring to a boil.
6. Add potatoes and let cook until fork tender.
7. Add heavy whipping cream and Parmesan cheese.
8. Add spinach.
9. Let the spinach cool down and you’re done!
