This Earthy Tofu & Sesame Soba Bowl is one of my favorite go-to lunches. The beauty of this dish is in the balance—you don’t need a heavy pool of sauce once everything is tossed together. Just a light coating of sesame, ginger, and coconut aminos brings out the rich, earthy flavors of the buckwheat and crispy tofu.
🥢 The Recipe Breakdown:
Ingredients:
1 bundle 100% buckwheat soba noodles
4 oz extra-firm tofu (pressed & cubed)
1/2 cup shredded carrots
1/2 cup shredded red cabbage and/or white cabbage
Chopped scallion tops (green parts only)
Roasted sesame seeds
The Light Sesame Dressing:
1.5 tbsp coconut aminos
1 tsp toasted sesame oil
1 tsp fresh grated ginger
1 tsp rice vinegar
1 tsp garlic-infused olive oil (for searing)
Quick Prep Steps:
1. Noodles: Boil soba noodles for 4–5 minutes or according to package. Drain and rinse under cold water to stop cooking and keep the texture firm.
2. Tofu: Heat garlic-infused olive oil in a skillet over medium-high heat. Pan-sear tofu cubes until golden brown and crisp on all sides.
3. Dressing: Whisk coconut aminos, toasted sesame oil, ginger, and rice vinegar in a small bowl.
4. Assemble & Toss: Add noodles, shredded veggies, and crisp tofu to your bowl. Drizzle the dressing and toss thoroughly—a little goes a long way! Top with fresh scallion greens or roasted sesame seeds.
