Tofu acts like a complete sponge here, soaking up all the warm allspice, thyme, and golden curry spices. Pair it with nutty brown basmati rice for the ultimate cozy weeknight meal! 🍛
✨ INGREDIENTS (Makes 4 Bowls)
The Base:
1 block (14 oz) Extra-firm tofu (pressed & cubed)
1½ tbsp Garlic-infused olive oil
2 tbsp Mild Jamaican curry powder (onion/garlic-free, if needed)
1 tsp Ground allspice + 1 tsp Dried thyme
½ tsp Fine sea salt + black pepper to taste
The Sauce & Greens:
1 cup Light canned coconut milk (swap for full-fat if you want an extra rich, velvety sauce!)
1 large bunch Fresh kale (stems removed, chopped) or collards
2 tbsp Fresh lime juice
To Serve:
2 cups Cooked brown basmati rice (½ cup per bowl)

1. Crisp the Tofu: Heat garlic-infused oil in a skillet over medium-high. Fry tofu cubes for 6–8 mins until golden on all sides.
2. Bloom Spices: Lower heat to medium. Add curry powder, allspice, thyme, salt, and pepper. Stir for 1 min until fragrant.
3. Simmer: Pour in coconut milk and fold in chopped kale. Cover and simmer 3–5 mins until kale is tender and bright green. (Tip: If the tofu soaks up the sauce fast, splash in 2–3 tbsp warm water or extra coconut milk!)
4. Assemble: Stir in fresh lime juice and serve warm over brown basmati rice in shallow bowls! 🍋🟩
