sweet n savory ginger chicken with sweet potato
the dish called ga kho gung is a flavorful feast featuring bite-sized pieces of bone-in chicken, braised and caramelized with lots of ginger in a sweet and savory fish-sauce-based glaze. Serve it over rice with a side of vegetables for a delicious and satisfying meal. Or try it my way with sweet potato cooked right into the savory glaze.
2 1/2 pounds halved chicken legs
2 tablespoons chicken bouillon powder
2 1/2 tablespoons granulated cane sugar
3 1/2 tablespoons fish sauce
1/4 teaspoon ground black pepper
Aromatics
3-inch piece fresh ginger (peel and slice into thin strips)
1 tablespoon minced garlic
2 tablespoons minced shallots
Caramel Color
2 tablespoons granulated cane sugar
2 tablespoons vegetable oil
Braising Liquid and Garnishes
1 /2 cup water or chicken stock
1/4 teaspoon ground black pepper
2 tablespoons thinly sliced cilantro/green onions
Peel sweet potato & dice, toss in olive oil & season with paprika, black pepper, & brown sugar. Add into air fryer and cook at 400 degrees for 10 mins.
In a large 12-inch skillet with a lid, add sugar and oil. Shake gently to distribute the sugar evenly. Heat on medium-high until the sugar melts and caramelizes to a dark amber/brown color OR skip this step and marinate chicken in dark soy sauce or caramel cooking sauce (i used jamaican browning) instead.
When sugar is a dark brown color but not black, immediately add ginger, garlic, and shallots to the skillet and pan-fry until fragrant (about 30 seconds).
Add the chicken and toss evenly with the caramel sauce until the chicken is tinted with a light brown color. Color will darken as it braises. Add chicken bouillon powder, sugar, fish sauce, and ground black pepper (if you haven’t already marinated beforehand). Toss to evenly coat the chicken with the seasonings.
Add liquid and braise: Add water. Cover the skillet with the lid and reduce the heat to a low simmer. Let it cook for 10-15 minutes. Add in sweet potato and toss everything together to coat in the glaze.
After 10 minutes, remove the lid and continue cooking for an additional 5-7 minutes. You should have some liquid to the dish. Adjust the seasonings if necessary at this point. Top with green onions & black pepper.
