My 15 Min Quick Energy Bowl ⚡️

I used to crash hard every afternoon, and coffee wasn’t enough to help. I recently started swapping heavy meals for lighter ones, like this leek-based sauté. Leeks are actually energy superstars, packed with B6 and iron to turn your food into fuel. Now, this meal is my go to natural recharge to power through the day!

Ingredients 🛒:

• 2 Large Leeks

• 1 Celtuce stem, peeled and sliced into rounds

• 1 cup Tomatoes,halved or chopped

• 1 tbsp Olive oil (or butter for healthy fats)

• 1 tbs toasted sesame oil

• Salt & Pepper to taste

Instructions 👩‍🍳:

1️⃣ Cut off the dark green tops and the roots. Slice the white and light green parts into 1-inch rounds. Rinse them thoroughly in a bowl of water to remove any hidden grit.

2️⃣ Heat your oil in a wok over medium heat. Add the leek rounds. Let them sear for about 3-4 minutes until they turn golden brown.

3️⃣ Add the tomatoes to the pan. Cover the skillet with a lid for 2–3 minutes. The steam will soften the leeks through to the center while the tomatoes and create a light, savory sauce.

4️⃣ Stir the leeks and tomatoes, and toss in the sliced celtuce. Stir, and cover for another 3 minutes.

5️⃣ Remove the lid, season with salt and pepper, and give it a quick toss. Finish with a drizzle of toasted sesame oil, and enjoy!

• Top with toasted walnuts or toasted sesame seeds for an extra nutty flavor!

• Serve over black rice for an extra health boost.
