Slow Cooker Mississippi Pot Roast
Ingredients
2 –3 lb boneless chuck roast
½ tsp salt or to taste
½ tsp black pepper
1 1 oz packet au jus gravy mix
1 1 oz packet ranch seasoning mix
½ cup 1 stick unsalted butter, sliced
8 –10 whole pepperoncini peppers
2 tbsp pepperoncini juice optional
Method
Add a slow cooker liner to the slow cooker, if desired.
Place the chuck roast in the slow cooker and season both sides with salt and black pepper.
Sprinkle the au jus gravy mix and ranch seasoning evenly over the top of the roast.
Arrange the sliced butter over the roast, then add the pepperoncini peppers around the meat. For a little extra tangy pepperoncini flavor, add 2 tablespoons of pepperoncini juice.
Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the roast is very tender and easily pulls apart with a fork.
Shred the roast directly in the slow cooker using two forks, then toss the meat with the flavorful juices before serving.
When I first tried making the Slow Cooker Mississippi Pot Roast, I was amazed at how few ingredients it required to create such a rich and tender meal. The combination of the au jus gravy mix and ranch seasoning mix adds a savory depth, while the pepperoncini peppers provide a subtle tang that brightens the dish without overpowering it. One tip I've learned is to use a slow cooker liner for easier cleanup, especially since the roast releases flavorful juices that can stick to the pot. I usually go with the low setting and let it cook for about 8 to 9 hours, resulting in meat that falls apart effortlessly. Adding butter on top of the roast is key because it melts throughout cooking, keeping the meat moist and contributing to the luscious sauce. If you want to intensify the flavor, a couple of tablespoons of pepperoncini juice really elevate the tanginess. This recipe is versatile too; sometimes I add potatoes and carrots around the roast to create a full meal in one pot. It’s also great for meal prep since leftovers reheat well and can be served over rice, mashed potatoes, or even as a sandwich. Overall, this slow cooker Mississippi pot roast is a crowd-pleaser with minimal effort—a true set-it-and-forget-it recipe that delivers comforting, flavorful results every time.
