🍋🍤 Lemon Pepper Chicken with Teriyaki Shrimp Rice & Garden Vegetables
Sometimes feeding the family is less about making one perfect meal and more about making sure everybody gets a little bit of what they want.
We were in the house trying to figure out what we wanted for dinner. One family member wanted seafood, I was in the mood for chicken, and my son is always happy when rice is involved. Then I looked around and thought, Okay… everybody needs some vegetables too. 😂
So I started working with what we already had in the kitchen.
I figured if somebody wanted Chinese food, we could make our own little version at home. I pulled together the rice, vegetables, and shrimp and gave everything that sweet and savory teriyaki treatment.
Now I wanted chicken too, but I didn’t want just plain reheated chicken. I wanted something juicy, flavorful, and glossy. I started thinking about lemon-pepper chicken, like the kind of flavor you might crave from places like Buffalo Wild Wings or Wingstop, and decided, Why not make my own version?
So I pulled out my lemon-pepper marinade, gave the roasted chicken a fresh coat, and warmed it through until that glaze was glossy and flavorful.
And just like that, everybody got something they wanted. 🍋🍤🍚🥦
Seafood? Check.
Chicken? Check.
Rice? Check.
Vegetables? Check.
No takeout boxes. No four different dinners. Just a little creativity, a few things already in the house, and a family meal that gave everybody a little bit of everything.
Sometimes the best dinner is the one you make work with what you’ve got. ❤️

Want to make your chicken extra juicy? Don’t drown it in the marinade. Give the cooked chicken a good coating, then warm it gently so the glaze has a chance to cling and shine without drying the chicken out.
