Stuffed Chicken Breast
4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
_ 1 cup roasted red peppers, drained and
chopped
• 1 cup mozzarella cheese, shredded 2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Toothpicks or kitchen twine for securing the chicken
INSTRUCTIONS
• Preheat your oven to 375°F (190°C).
2 In a mixing bowl, combine the chopped spinach, roasted red peppers, mozzarella cheese, minced garlic, oregano, basil, salt, and pepper. Mix well until the ingredients are evenly
incorporated.
3 Pat the chicken breasts dry with paper towels. Carefully cut a pocket into each chicken breast by slicing horizontally, making sure not to cut all the way through.
4 Stuff each chicken breast pocket generously with the spinach, roasted red pepper, and mozzarella mixture.
Use toothpicks or kitchen twine to secure the openings if necessary.
5 In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, place the stuffed chicken breasts in the skillet and sear for 3-4 minutes on each
side, until golden brown.
6 Drizzle the balsamic vinegar over the chicken while it's in the skillet.
• Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and
reaches an internal temperature of
165°F (74°C).
8 Remove from the oven and let the chicken rest for 5 minutes before serving. This allows the juices to redistribute for a juicier bite.
9 Serve the stuffed chicken warm, optionally garnished with fresh herbs or a side salad.
