If you’ve ever found yourself staring at a container of St. Paddy’s Day leftovers wondering how to make them exciting again, Irish egg rolls are your answer. Using deli corned beef and bagged coleslaw mix as a shortcut cuts down prep time while still delivering the beloved flavors of the holiday. The splash of vinegar in the sautéed filling adds a subtle tang that helps brighten the savory corned beef and cabbage mixture. What I’ve found especially handy is the versatility of the wonton wrappers—not only do they make the perfect crispy shell for these egg rolls, but they’re also great for various other snacks like rangoons or dessert rolls, maximizing your ingredients. When preparing the filling, be careful not to overstuff the wrappers to avoid splitting during cooking. Spraying a little oil on the rolls before air frying or baking at 375°F ensures a golden, crispy finish. Flipping halfway through the cooking process helps both sides get evenly crisp. If you love a little melted cheese in your egg rolls, adding a slice just before wrapping elevates the richness. For dipping sauces, Thousand Island dressing pairs wonderfully with the savory filling, but horseradish cream or mustard add a nice kick for those who prefer a bit of heat. These egg rolls are not only a delicious way to reinvent leftovers, but they also make perfect single-serve snacks or appetizers when entertaining. In my experience, this recipe is a great way to reduce food waste and add variety to your meals, especially after holiday celebrations when corned beef and cabbage are often abundant. Plus, making these rolls is surprisingly quick and easy, so you don’t have to wait days for leftovers to lose their appeal. Give this method a try next time and you might find that egg rolls become a staple way to enjoy your favorite Irish flavors all year round!
