3 things I made so I actually eat real food

this week 😌

this is my version of meal prep when I don’t feel like meal prepping.

none of that crazy 12 recipes nonsense, no perfectly portioned meal boxes, just a few things I can mix and match during the week so I stop defaulting to snacks

blended overnight oats, 3-cheese egg bites, and peanut butter banana muffins 🐻🤎

all easy, all made with stuff I already had, done in under an hour

nothing fancy but it gets the job done (and these also happen to be the best muffins i’ve ever made, ngl).

I like to grab two of the egg bites for an easy dinner -> toss in a bowl with rice, tuna, avocado, and soy sauce with a pack of teriyaki or sweet chili seaweed

the basics:

something cold

something savory

and something sweet

... Read moreWhen I first started trying to eat more wholesome meals, I found traditional meal prepping a bit overwhelming—twelve different recipes, portion control, and hours of kitchen time rarely fit into my busy schedule. That's when I shifted to a minimalist meal prep approach like the one shared in this post. Blended overnight oats have become a staple for me, especially on hectic mornings. They’re super easy: just blend oats with milk (or a milk alternative), a bit of yogurt, and your favorite fruits or nuts the night before. The result is a creamy, nourishing breakfast ready to grab and go. This method saves time and ensures I always start my day with a healthy base. The 3-cheese egg bites are a revelation for quick savory meals. Baking eggs beaten with a mix of cheeses, herbs, and a pinch of seasoning in muffin tins makes prepping multiple servings a breeze. I usually bake a batch on Sunday, and throughout the week, I combine two egg bites with simple sides like rice, avocado, and maybe canned tuna for an easy dinner. Adding a packet of teriyaki or sweet chili seaweed brings in extra flavor without complicating the preparation. For something sweet, peanut butter banana muffins hit the spot every time. Low-effort and made with pantry staples, these muffins not only curb cravings but also provide nutritious energy boosts. The combination of peanut butter and banana keeps them moist and flavorful, better than any muffin I've tried at a bakery! The key takeaway from this simple meal prep strategy is that it doesn't have to be elaborate or fancy to be effective. Having three go-to items—something cold like overnight oats, something savory like egg bites, and something sweet like muffins—helps me avoid the pitfall of defaulting to unhealthy snacks throughout the week. If you’re looking for a realistic way to incorporate more real food into your routine without stress, this pared-down approach may be exactly what you need.
