I’m about 85% sweet potato at this point and I’m not apologizing 🍠✨
welcome back to day 7 of me single-handedly keeping the sweet potato industry in business.
I mean, just look at this. It’s THE Glow Salad, and if I was trying to design a custom menu to feed your gray matter 🧠 and your skin✨ it would look a lot like this salad. she’s doing double duty as an absolute powerhouse for cognitive function and neuroprotection.
let’s do a quick reality check here: it’s summer, it’s hot, and frankly, I don't have the bandwidth to sweat over a stove. I have things to do, empires to run, people to ignore.
Don’t alter the dressing in ANY way.
I will know 👀
Now, if you’ll excuse me, I have to go plot minor acts of world domination. Or at least figure out how to take over the tri-state area by sunset. K bye🔥👑

... Read moreAs someone who loves quick, nutritious meals, I’ve found that incorporating sweet potatoes into my summer salads not only adds natural sweetness but also a wealth of health benefits. Sweet potatoes are rich in antioxidants, vitamins A and C, and fiber, making them excellent for skin health and cognitive function—exactly why they’re a hero ingredient in this Glow Salad.
One thing I’ve learned when making salads like this is to not compromise on the dressing. The cilantro mint dressing here is a game changer. The cool freshness of mint combined with the herbal zest of cilantro creates a bright flavor that lifts the entire salad. I usually follow the recipe exactly, especially not changing the garlic powder or tahini balance, because it’s a balance of creamy, tangy, and slightly spicy flavors that complement the salad ingredients perfectly.
Adding protein like grilled chicken or halloumi also turns this into a well-rounded meal that keeps me energized for long summer days. And for plant-based options, chickpeas or tofu work beautifully with the dressing and veggies too.
For texture and color, the pomegranate seeds and pickled red onions add bursts of sweetness and tang, which elevate the salad’s depth. The fireworks of flavors and textures make every bite exciting and satisfying.
If you’re short on time but want something nourishing and vibrant, this salad is ideal. I often prep the sweet potatoes and dressing in advance so assembling the salad becomes a breeze. Plus, it keeps well for next-day lunches.
Finally, the mental boost this salad offers is a great bonus. Ingredients like sweet potato and fresh herbs support brain health and neuroprotection, so it truly feels like fuel for both body and mind during those active summer months.
SO GOOD!! 😍
