Honey BBQ Chicken and Mac & Cheese Meal Prep
I did a meal prep this week for my husband and I. I did get the idea from here, but I seasoned it differently.
Four packs of Bone-in Chicken Thighs made 4 meals for the two of us. I put two pieces of chicken in each container
Chicken Seasoning:
- White Sugar
- Himalayan Salt
- Pepper
- Garlic Powder
- Onion Powder
- A Chicken Seasoning
Pan Fried the Chicken
BBQ the chicken in a big bowl and shake
Put in the Air Fryer for 5 minutes
Mac & Cheese:
- Salted the water with Himalayan Salt, Pepper and Oregano
- Used Egg Noodles are bringing to a boil
- Velveeta Cheese Block
After draining the noodles:
I put milk, butter and cheese block in the pot and let it melt together making a nice cheese sauce.
I seasoned it with Himalayan Salt and Pepper
Put the noodles in a big white bowl and added the cheese sauce to the noodles
I've been on a meal prep kick lately, and let me tell you, finding recipes that are both delicious and practical for busy weekdays is a game-changer! My latest obsession? This Honey BBQ Chicken and Creamy Mac & Cheese combo. It's not just food; it's a little bit of comfort packed into a clear glass meal prep container, ready to save my evenings. What I love most about this particular meal prep is how satisfying it is. Having a serving of honey BBQ chicken waiting for me alongside that rich, creamy mac and cheese means I don't have to think about cooking after a long day. It’s hearty, flavorful, and genuinely makes me look forward to lunch or dinner. Plus, knowing exactly what's going into my meals helps me stay on track, and it’s so much more budget-friendly than ordering takeout. Let's talk about the chicken first. I swear by using bone-in chicken thighs for this recipe. They stay incredibly juicy and flavorful, even after reheating, which is crucial for meal prep. The bone adds so much depth! When seasoning, don't be shy – a good mix of sweet (white sugar) and savory (Himalayan salt, pepper, garlic, onion powder) really builds that base. The magic happens when you pan-fry them to get a nice sear, then generously coat them in honey BBQ sauce. A quick five minutes in the air fryer afterward gives them that perfect sticky, slightly caramelized finish without drying them out. It’s seriously a game-changer for getting that restaurant-quality BBQ flavor at home. Now, for the mac and cheese, my secret weapon for ultimate creaminess has to be Velveeta. I know, I know, but trust me, it melts into the most luxurious, smooth sauce that holds up beautifully throughout the week. Starting with salted water seasoned with Himalayan salt, pepper, and a touch of oregano really infuses flavor into the egg noodles right from the start. Egg noodles are fantastic here because their wider shape really grabs onto that rich cheese sauce. After draining, I just melt down the Velveeta with some milk and butter – it comes together so quickly and effortlessly. Stirring the noodles into that golden, cheesy goodness is pure bliss! For successful meal prepping, portioning is key. I find that using those clear glass meal prep containers makes it super easy to see what I have and keeps everything fresh. I usually get about four meals for two people out of this recipe, putting two pieces of chicken and a generous scoop of mac and cheese into each. When it's time to eat, I just pop it in the microwave for a couple of minutes, or if I have more time, a quick reheat in the oven brings the chicken back to life beautifully. To make it a truly complete meal, I often add a quick side of steamed broccoli or some sautéed green beans when I'm ready to eat. It’s an easy way to sneak in some greens and balance out the richness. Honestly, this Honey BBQ Chicken and Mac & Cheese meal prep has become a staple in my kitchen. It takes the stress out of weeknight cooking and ensures I always have a delicious, homemade meal ready to go. Give it a try; you won't regret having these tasty, ready-to-eat meals on hand!
