Marinated Cucumbers, Onions and Tomatoes

Ingredients

3 medium cucumbers, sliced

3 medium tomatoes, cut into wedges

1 medium red onion, thinly sliced

½ cup white vinegar

¼ cup water

3 tablespoons granulated sugar

1 teaspoon salt

½ teaspoon freshly ground black pepper

2 tablespoons chopped fresh parsley (optional)

Instructions

1. In a large bowl, combine the sliced cucumbers, tomato wedges, and red onion.

2. In a separate small bowl or measuring cup, whisk together the white vinegar, water, sugar, salt, and black pepper until the sugar is mostly dissolved.

3. Pour the vinegar mixture over the vegetables and toss gently to coat everything evenly.

4. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, or up to overnight, to allow the flavors to meld.

5. Before serving, toss gently again and sprinkle with chopped parsley if using.
