Red cabbage slaw
If you’re looking for a lighter side dish this summer, this Red Cabbage Slaw is it. No mayonnaise, just a crisp, fresh slaw tossed in a bright lemon Dijon dressing that’s perfect with tacos, barbecue, pulled pork, or grilled chicken. It’s one of those sides that gets even better after it hangs out in the fridge for a bit.
Here’s what you’ll need:
• 1/4 cup freshly squeezed lemon juice
• 1/4 cup olive oil
• 2 tablespoons Dijon mustard
• 2 tablespoons apple cider vinegar
• 1 tablespoon honey
• 1 teaspoon salt
• 1 teaspoon pepper
• 1 head red cabbage, cored and thinly sliced
• 3 green onions, sliced
Full recipe is over on the blog linked in my bio.
I’ve always found that red cabbage slaw is a fantastic way to add crunch and vibrant color to any summer meal without the heaviness mayo-based slaws often bring. The use of lemon juice and Dijon mustard in the dressing gives it an excellent tangy zing that really complements smoky or grilled dishes like pulled pork or barbecued chicken. One tip I’ve learned from experience is to let the slaw sit in the fridge for at least an hour before serving; this resting time allows the cabbage to soften slightly and soak up the flavors, elevating the taste. For those who want a little extra punch, adding a pinch of red chili flakes or a teaspoon of smoked paprika to the dressing can bring a subtle heat and smoky depth. Another great variation is tossing in some grated carrot or thinly sliced apple for added sweetness and texture. The recipe’s simplicity using common kitchen staples like olive oil, apple cider vinegar, honey, and green onions makes it accessible for any home cook. Plus, red cabbage is packed with antioxidants and vitamin C, making this slaw not only delicious but nutritious as well. When serving, I like to pair this slaw with grilled meats or as a topping for tacos to add a fresh, crunchy contrast. It also works wonderfully as a standalone side salad for picnics or potlucks during warmer months. Overall, making this red cabbage slaw has become a summer favorite in my kitchen due to its refreshing flavor and versatility.
