Lemon Posset recipe:
- 4 or more lemons
- 2 cups heavy cream
- 2/3 cup granulated sugar

Lemon Posset is truly one of the easiest and most elegant desserts you can prepare, especially during warm weather when a light, citrusy treat is ideal. What makes this recipe stand out is the use of Pure Madagascar Vanilla Extract, which adds a subtle sweetness and complexity that beautifully complements the tartness of fresh lemon juice. From my experience making this recipe, a few tips can help elevate the final outcome. First, using heavy cream with a higher fat content ensures a rich and silky texture. When boiling the cream and sugar mixture, keep an eye on the heat to avoid boiling over or burning, as this mixture thickens quickly. Stir continuously until the sugar fully dissolves; this prevents any graininess in the posset. The unique step of hollowing out lemon halves to use as serving cups not only provides an attractive presentation but also subtly infuses the posset with more lemon aroma. I find that allowing the mixture to cool before pouring it into the lemon shells ensures a smoother set. Refrigerate for at least two hours to get that perfect jiggly, custard-like consistency. Finally, garnishing with fresh berries and mint not only adds vibrant color but also introduces fresh, complementary flavors that enhance the dessert's appeal. Whether you're hosting a summer gathering or just want a quick, homemade treat, this Lemon Posset recipe is an excellent choice. It’s a delightful balance of creamy, tangy, and sweet, making it a crowd favorite and a refreshing end to any meal.
