Life gets busy, and sometimes finding the energy to cook a healthy meal feels like a monumental task. That's why I swear by this dish. It's packed with protein, fresh veggies, and comforting rice, making it a complete meal that's ready in a flash. Here’s how I like to make chicken peppers and rice with me: What You'll Need (My Simple Ingredients List): 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces 1-2 tablespoons olive oil 1 large bell pepper (any color, I love a mix of red, yellow, and green), sliced 1 small onion, chopped 2 cloves garlic, minced 1 cup uncooked jasmine rice (or your favorite rice) 2 cups chicken broth (or water) 1 teaspoon paprika ½ teaspoon cumin Salt and black pepper to taste Optional: a dash of soy sauce or Worcestershire sauce for extra depth Fresh parsley or cilantro for garnish Let's Get Cooking!
