▪️1 cup reduced fat cheddar cheese

▪️15 oz black beans

▪️One package taco seasoning

▪️Olive oil spray

▪️Seasoning for potatoes: Seasoning salt, cumin, chili powder, paprika, garlic powder, onion powder

▪️Pico de gallo (homemade or store bought)

Directions:

▪️Peel and dice potatoes. Spray with olive oil spray & season with seasonings listed.

▪️Bake potatoes at 400 degrees for 25-30 minutes, until fork tender & slightly crispy.

▪️Brown ground beef with diced onion, black beans, and taco seasoning.

▪️Assemble bowls with potatoes, meat mixture, cheese, and toppings of your choosing!
