1 ripe banana (mashed)
1/4 cup chopped fresh cherries
1 3/4 cups gluten-free all-purpose flour
1/2 cup sugar (or maple syrup/honey)
2 flax eggs (2 tbsp flax + 5 tbsp water)
1/2 cup oil
1/2 cup milk
1 1/2 tsp vanilla
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Preheat oven to 350°F and line a 12-cup muffin tin.
Make flax eggs and let them thicken.
Mash banana until smooth.
Whisk in oil, flax eggs, milk, vanilla, and sugar.
In another bowl, mix flour, baking powder, baking soda, and salt.
Combine wet + dry until just mixed.
Fold in cherries.
Divide evenly into 12 muffins.
Bake 18–22 minutes until set and lightly golden.
