Acorn Squash Boats
Prep time- 10 minutes
Cook time- 35 minutes
Total time - 45 minutes
1lb ground beef
1 14.5oz can diced tomatoes
1 acorn squash
1 cup chopped carrots
1 cup diced onion
1/4 tsp powdered cayenne pepper
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
1tbs olive oil
3 slices of Swiss cheese
Step 1: preheat oven to 350°F
Step 2: wash acorn squash and cut in half the long way
Step 3: remove seeds (save for toasted squash seeds later)
Step 4: rub olive oil on both sides of each squash half. Place on a lined banking sheet with the rind side up.
Step 5: bake for 30 minutes
While the squash baking, prepare the filling:
Step 1: add ground beef to a large skillet pan - brown for about 5 minutes
Step 2: add diced onion, carrot, and dry spices - mix well and cover- let cook for another 5 minutes, stirring occasionally
Step 3: drain canned tomatoes and add to the pan. Stir in and let cook another 5 minutes, stirring occasionally
When the mixture is complete and the squash is baked, flip the squash with the meat side up. Fill the center holes with the beef mixture. Cover filling with sliced cheese.
Bake for another 10 minutes to allow cheese to melt.
Serve with extra beef mixture on the side.
Tips- I typically bake my squash earlier in the day and let it cool. I work from home, so this makes it easier on me when I’m making dinner rather than doing everything all at once
